Black-eyed peas are also known as “frisuelo beans,” among other names. The grain is small, kidney-shaped, cream-colored with fine streaks and a characteristic black eye over the hilum. This bean does not require soaking and can be cooked quickly. Its texture is creamy and it has a distinctive flavor.
