Also known as beluga lentil, the caviar lentil is characterized by its very small size, its rounded or semi-spherical shape, and its shiny black color. An interesting fact about this variety is that it contains between 20% and 30% more protein than any other lentil, as well as a high amount of complex carbohydrates (50%) and fiber (10%), which help regulate blood sugar and cholesterol levels.
