Red beans are named after their reddish or purple hue. The grain is medium-sized, slightly kidney-shaped, flat, and elongated. It is highly appreciated for its fine skin and tenderness once cooked. During soaking, it loses some of its color and produces a rather dark broth when cooked. Nutritionally, it has a high protein and iron content.
