This bean is spherical, medium-sized and has a distinctive dark purple color on a white background. It is a lesser-known variety, but highly appreciated for its unique flavor, very different from other beans. It is also known as: “caparrón rioja”, “bishop’s bean” or “puppy bean”. It is the main ingredient in the traditional dish “olla podrida”, typical of La Rioja and Burgos.
