Peeled lentils are Castilian lentils that have had their skin removed, leaving a yellow grain. That’s why they are also known as yellow peeled lentils. Since they are skinless, they don’t need soaking and cook quickly. The lack of skin also makes them easier to digest while preserving all the nutritional benefits of lentils.
